Favorite Fall Stew

I recently tried this tasty stew and the results were enjoyed by both members of our household!

Simply put the following ingredients in a Crock-Pot:

2 (15 oz.) cans red beans 

2 raw boneless chicken breasts  

*4 cups chicken broth

1 (14 1/2 oz.) can diced tomatoes (or dice your own) 

2 cloves garlic, minced

Cover and cook on low heat for 10 hours or on high for 6.

Sweet potatoes add a nice flavor to this stew. I simply cubed them, cooked them separately and added them to the stew before serving. (I dislike the texture of overcooked sweet potatoes!) However, it would probably work fine to add uncooked cubed sweet potatoes half way through the cooking time.

I debated about the final ingredient for this recipe: 1/4 cup peanut butter.  I added a bit of peanut butter to a small bowl of stew before adding it to the entire pot! I was pleasantly surprised and decided the nutty flavor complimented the sweet potatoes and chicken. If this final step sounds undesirable simply leave it out!

Shredding the cooked chicken adds a nice texture to the stew. This stew can be topped with fresh chopped cilantro and peanuts. Enjoy.

  • Homemade chicken bone broth:

chicken bones and any parts of the chicken that you’re family doesn’t consume

stalk of celery

3 carrots,

1 onion

garlic

salt

bay leaves

1 T. apple cider vinegar

Place in a slow cooker and cook on low for 18- 20 hours

Strain and enjoy in homemade soups
